Californian Celebrity Chef Unearths Niseko’s Fascinating Food & Wine Scene

Trail-blazing Californian Chef Stuart Brioza explored the Niseko region and other parts of Hokkaido as part of an adventure and gastronomy tour with Niseko Tourism this month.

Over 14-days Brioza and his family visited farms and primary producers around Niseko and as far north as Rishiri Island, meeting the people behind the productions at dozens of locations.

The tour aimed to highlight the region’s diverse food bounty, tell the stories of Hokkaido’s fascinating food scene, and enjoy plenty of outdoor activities along the way.

It culminated with an 8-course feast in Niseko that Stuart and his wife prepared, with each course featuring ingredients discovered and collected along the journey (photos and details available).

Brioza is a James Beard Award-winning chef with 2 Michelin stars to his name.

With a profound belief in the power of nature to inspire cuisine, Brioza has become a pioneer in the American and Californian food scenes.

His success story underscores the importance of leading a healthy lifestyle and forging a closer connection to the natural world.

Throughout his career he has continually urged the food industry to embrace sustainable practices by “drawing inspiration from the oceans, mountains, and fields that surround us”.

Accompanying Brioza were his wife and award winning pastry chef Nicole, their son Jasper, and the owners of Niseko’s renowned Bar Gyu+, Ioanna Morelli, and Hisashi Watanabe.

The team cycled through the picturesque vineyards of Yoichi, sampling the region’s finest wines with the owner of the Niseko boutique wine shop, Cave de Bambou, Chiku Masahiro.

They visited the Niseko Distillery, organic farm Lalala Farm, and the famous Niseko View Plaza for all the freshest produce.

They were also able to enjoy the Hanazono Tree Trekking, and experienced the thrill of Hanazono ZipFlight, one of the longest ziplines in the world and the longest in Japan.

Brioza and his entourage travelled with new Niseko Tourism member Kammui, a leading Japan-based outdoor experience platform offering personalised services, and providing exclusive benefits to its guests.

The 8-course meal was hosted by Chalet Sena, managed by Taiga Niseko (pictures and information available).

Niseko’s Summerlife magazine interviewed Brioza at the end of the trip and will include a feature article in its 2024 magazine.

An immersive large-scale installation of art of light held in the summer, set in the vast nature of Niseko Hanazono Resort. World-renowned British artist Bruce Munro creates this spectacular outdoor exhibition (1.3 km of light-based artwork) and will return to Niseko on July 1st, 2023. Wine Spectator Announces Award of Excellence for Teppan at Park Hyatt Niseko Hanazono

The annual Wine Spectator’s Restaurant Awards recognize restaurants whose wine lists offer interesting selections, are appropriate to their cuisine, and appeal to a wide range of wine lovers. A wine list must present accurate information to qualify for an award, including vintages and appellations for all selections. Complete with producer names and correct spellings are mandatory, and the list’s overall presentation is also essential. Lists meeting these requirements are judged for one of three awards.

Teppan is one of only 11 restaurants in Japan and the sole winner of the Best of Award of Excellence, categorized as two wine glasses, for “The wine list displays excellent breadth across multiple winegrowing regions and significant vertical depth of top producers, along with the superior presentation. Typically offering 350 or more selections, these restaurants are destinations for serious wine lovers, showing a deep commitment to wine in the cellar and through their service team”.

Renowned cycling tire manufacturer Panaracer and cycling events company Hokkaido Events  are excited to announce continued partnership through Panaracerʼs renewed title sponsorship of the Niseko Gravel cycling event. 

This gravel festival event, originally organized as two test events, was first held in October of 2020 with just 5 riders and  was followed by a second edition in 2021 with an impressive turnout of 100 riders. The event has grown from these  humble origins and is now held twice a year, with a ride event in spring and main ride event in autumn. The 2022 Niseko  Gravel Autumn Ride marked the 5th running of the event, and attracted over 300 participants who had the opportunity to  experience the region’s untouched natural beauty, ever-changing landscapes, and thrilling gravel rides. 

The autumn 2023 event will be the sixth edition of this event, and will see the event expand its scale and further solidify  Niseko as the hub of gravel culture in Japan. Like last year, the event will take place over two days (September 23rd and  24th) and will be held at the Niseko Annupuri International Ski Resort. Riders and attendees will be able to visit the  booths of their favorite gravel cycling and outdoor gravel brands, and will be able to choose from a wide selection of food  trucks offering delicious treats and refreshing drinks. The festival-like atmosphere of this event will showcase the region’s  fast growing gravel scene, and make for an enjoyable experience for locals and visitors alike. 

Panaracer is a leading manufacturer of bicycle tires and tubes, headquartered in Tamba City, Hyogo Prefecture.  Throughout their 70 year history, Panaracer has produced numerous products and has supported the achievements of  riders and teams at the highest levels of cycling. In 2014, Panaracer released their now iconic “GRAVELKING” tire – one  of the first gravel specific tires to hit the market. 9 years later, this tire has gained tremendous popularity the world over, and now boasts a top-class share of the market. 

HOKKAIDO EVENTS was established in 2015 in the international winter resort of Niseko with the aim of further boosting  the region’s tourism industry. The organization now hosts the NISEKO CLASSIC amateur cycling race, an UCI  sanctioned Gran Fondo World Series qualifier that has grown into one of the region’s flagship events. This event, and the  Hokkaido Events organization, aims to enhance the area’s tour industry and to further establish it as a global summer  destination.

HOKKAIDO EVENTS engages in various activities, primarily focused on promoting cycling businesses that showcase the  region’s natural beauty. The organization also manages and organizes several small-to-medium-scale events which are  deeply rooted in the local community. The organization’s main event, the “NISEKO CLASSIC”, has seen steady growth in  popularity with the 2023 event (held from June 17th to 18th of 2023) drawing over 1,100 attendees to the region from  throughout Japan and around the world. 

The renewed relationship between Panaracer and HOKKAIDO EVENTS, through Panracer’s continued sponsorship of  NISEKO GRAVEL, represents the organizations’ common goal of establishing a unique, authentic and distinctively  Japanese gravel culture. The two organizations’ share a vision of growing this event, and expanding it to the global  stage, and have reached an agreement for Panaracer’s continued sponsorship of the event. 

As part of Panaracer’s sponsorship, the organization is providing prizes, as well as promotional and financial support.  Sponsorship funds are allocated towards the events’ ride operations, venue festivals and event promotion. Panaracer’s  contributions aim to develop the culture of gravel riding in Japan, fostering its growth and advancement.

Niseko resorts and hotels have received over 18 nominations across seven categories at the highly acclaimed 2023 World Ski Awards. This year marks the tenth edition of the awards program, and Niseko has once again demonstrated its dominance by securing an impressive number of nominations and accolades across multiple categories.

Since its inception in 2013, the World Ski Awards have recognized excellence in the ski industry.
