Starting from August 7, 2023, Asyatt. has announced the management and operation of the restaurant and bar on the 1st floor of “Chatrium Niseko,” named “The Flats. Restaurant / Bar.”

Asyatt, headquartered in Niseko Town, Hokkaido, offers all-inclusive services for ultra-high-net-worth clients.
Its new restaurant, “The Flats. Restaurant / Bar,” opened on the 1st floor of Chatrium Niseko in Niseko-Hirafu, Kutchan Town, launched a soft opening from 7th August to mid-September and will announce its grand opening in December.

This establishment marks the second branch of “The Flats. Wine Bar / Lounge,” a private lounge in Hirafu, Kutchan Town, managed by Asyatt. During the summer season, guests can enjoy casual lunches, and during the winter season, The Flats. will offer a new genre of Japanese cuisine dinners.

Restaurant:

The restaurant concept, “Japanese Stock Terroir,” boldly expresses a new genre of Japanese cuisine centered around seasonal ingredients from
Hokkaido. Casual lunches are also available during the summer off-season. Hokkaido is a treasure trove of rich ingredients from spring to autumn;
ingredients harvested and preserved during this period, along with fresh seafood and game that has accumulated nutrients in autumn, are boldly
grilled. This new interpretation of “Japanese Stock Terroir” cultivates an innovative style of Japanese cuisine.

The dining experience offers à la carte, course menus, and Chef’s Table. From shared-style dishes to course-style cuisine, guests can enjoy a new interpretation of robata grill presentations that suit various dining scenes. The center of the dining area displays seasonal ingredients from Hokkaido. At Chef’s Table, guests will be asked to select ingredients from the display, and The Flats chef will grill Hokkaido’s seasonal ingredients in front of an open kitchen, creating special and unforgettable dishes.

Bar:

The bar, themed “Chashitsu Bar,” – “Tea Room Bar” – creates an ambiance reminiscent of a traditional Japanese tearoom.
It offers cocktails based on matcha and green tea, as well as a selection of wines curated by sommeliers, various Sake from different regions of Japan, and cocktails inspired by “NISEKO,” paired with Japanese finger foods made from seasonal ingredients. Guests can explore the collection of Japanese sake, including those
crafted by emerging and cutting-edge sake brewers, and enjoy meticulously hand-rolled sushi and bite-sized tempura as accompaniments. A new interpretation of a traditional tea ceremony experience is offered, allowing guests to enjoy a leisurely cocktail time after checking into the hotel.
