15th September: Synergies with NIKI Hills Winery

On 15 September, we are honoured to co-host an evening with NIKI Hills Winery, one of Hokkaido’s leading wineries. Designed to enhance the delicate flavors and sophisticated textures of our menu, each course of the evening has been meticulously paired with their finest wines.
The journey begins with a sophisticated Chardonnay Sparkling NV. Its vibrant effervescence harmonizes with the subtle elegance of the Chef’s Hokkaido Scallop Carpaccio, adorned with asparagus and a delicate yuzu dressing. This is followed by the comforting richness of Shinshinotsu Barley Risotto. This is enhanced by the umami of marinated Amaebi prawns and cauliflower, perfectly paired with the aromatic Hatsuyuki Kerner 2022.
For the fish course, Ainame in Vin Blanc Sauce, we present Chardonnay 2020, whose minerality perfectly complements the dish’s complex flavors, including clams and ikura. The bold yet refined Zweigeltrebe 2022 is beautifully paired with the highlight of the evening, Hokkaido Beef Cheek in Zweigeltrebe Sauce. The evening culminates with a sublime creation from PIERRE HERMÉ PARIS. It is paired with the luxurious sweetness of Hatsuyuki Late Harvest 2019.

21st September: A Tribute to Camel Farm Winery

On the 21st of September, the spotlight will be on Camel Farm Winery, whose commitment to expressing the character of the terroir of Hokkaido is reflected in each and every glass. The evening begins with the sophisticated CAMEL Brut Methode Traditionelle BdN 2018, exquisitely paired with fresh scallop carpaccio.

Kerner Private Reserve 2022, a wine of remarkable depth and complexity, enhances the richness of the barley risotto. The evening continues with Chardonnay 2022 paired with delicate Ainame fish, followed by Pinot Noir Special Selection 2022, a wine of deep elegance, with tender Hokkaido beef cheek. The LEGAMI Demi-Sec 2022, paired with a PIERRE HERMÉ PARIS dessert, brings the experience to a graceful conclusion.

In the afternoon, from 2pm to 4pm, guests are invited to attend a delightful Welcome Wine Tasting, embodying the refreshing spirit of Hokkaido. On 15 September, the perfect way to invigorate your senses and set the stage for the evening ahead, enjoy the crisp and sparkling notes of NIKI Hills sparkling wine. On September 21, a carefully selected wine from Camel Farm Winery will be offered. A refreshing and welcoming experience that seamlessly introduces you to the luxury and cultural richness of Park Hyatt Niseko Hanazono.
